The Ritual

Heat to 85°C
Never boiling. Water too hot destroys the delicate catechins and the subtle floral notes that define a true Assam.

Steep for 3 minutes
Use 2 grams per 150ml. Allow the leaves to unfurl completely — watch the amber bloom into the water.
